What you’ll need:
½ cup of PURO Coconut Flour
2 tablespoons of PURO Coconut Nectar
⅛ cup of PURO Unrefined Coconut Sugar
½ a cup of PURO Virgin Coconut Oil melted and cooled
2 ripe bananas
2 large eggs or 3 small eggs
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
¼ teaspoon of sea salt
½ teaspoon vanilla extract
How to make it:
- Preheat the oven to 180°C and mix the wet ingredients. Crush the ripe bananas with a fork, add the eggs, coconut oil, coconut nectar and vanilla extract or essence and mix until they have a smooth consistency.
- Add the dry ingredients: coconut flour, sea salt, baking powder and bicarbonate of soda. Coconut flour absorbs moisture so you may find you need to add some plant based milk or another egg. The final mixture should be smooth and runny in consistency.
- Pour mixture into a tray and add sliced bananas on top. Bake for 20-30 minutes.
- Slice and enjoy with some delicious coconut nectar for a sweet treat or keep it for a quick breakfast on the go.
